2 tbsp (30 ml) vinegar or lemon juice
470ml milk
1. Put 2tbsp vinegar or lemon juice in a 2 cup measuring glass.
2. Fill with milk to the 2 cup (500ml) mark.
3. Let rest a few minutes before using
Great for using as a substitute for buttermilk in my Buttermilk Pancakes recipe.

Buttermilk Pancakes

Very good recipe for pancakes, definately not the ones you'd make from a box! Works well for breakfast or any meal of the day.
Ingredients required:
3 eggs
2 cups Buttermilk (or soured milk)
1-1/2 cups all-purpose flour
1 tbsp sugar
1 tsp baking soda
1 tsp butter
maple syrup
Instructions:
1. Beat eggs and buttermilk in a medium sized bowl.
2. Combine flour with sugar and baking soda. Mix well.
3. Mix dry ingredients with the milk mixture.
4. Melt butter and stir into batter mixture.
Add other ingredients to the mixture to put added flavour. Add syrup, blueberries or even chocolate chips. Whatever your heart desires.

I love going to restaurants and trying their chicken fajitas, I found this recipe which is great and now I can make my favorite meal at home.
1tbsp vegetable oil
1 sml onion thinly sliced
1 medium red and green pepper (cut in strips)
1/2 tsp minced garlic or 1 clove fresh garlic
1/4 tsp chili powder
1/4 tsp cumin
1/3 cup Monterrey jack cheese (shredded)
Chicken
Sour cream
Salsa
1. Heat oil over medium heat.
2. Add peppers and onion for 3-4 minutes.
3. Add precooked chicken strips, garlic, chili powder, cumin. Cook for 2-3 minutes.
4. Serve and enjoy.
Tip - more chili powder or cumin can be used to make a stronger flavour.

I'm a big fan of Fettucine Alfredo, this is a very easy recipe to make and it tastes great!
1 lb linguine
1 cup heavy cream
3 tbsp softened butter
salt
pepper
Parmesan cheese
1. Add pasta to salted boiling water. Cook until tender but firm.
2. In a saucepan, add 3/4 cup of the heavy cream and the 3tbsp butter. Cook over medium heat to thicken.
3. Add pasta and toss then add remaining cream and cheese.
4. Add salt, pepper, or nutmeg to taste (optional).

Another very easy recipe to make for the holidays, or get togethers throughout the year. Can be frozen to use at a later date.

1. Melt chocolate wafers in a double boiler.
2. Dip pretzels in chocolate, then place on a cookie sheet covered with waxed paper.
3. Drizzle skor bits over the pretzels and allow to cool.
4. Enjoy!

We've all tried weight loss programs before, trying to cut back our fat intake or any fad diets on the market. Here's a recipe I found quite useful while trying to lose weight.

2 cans non fat chicken broth
5 large potatoes
Salt and pepper
Directions:
Place broth and potatoes in a saucepan.
Heat to a boil.
Cover and cook for 10 minutes over medium heat.
Drain and save the broth.
Mash with 1-1/4 cup of broth and add salt and pepper.
Serves 6

1/2 cup shortening
3/4 cup packed brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla
1-1/2 cup flour
1tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 cups semi-sweet chocolate chips
2 cups quick rolled oats
1. Cream together margarine, shortening, brown sugar, and white sugar.
2. Beat in eggs and vanilla.
3. Combine in separate bowl flour, baking soda, cinnamon, salt.
4. Blend into creamed mixture.
5. Stir in rolled oats and chocolate chips.
6. Spoon onto greased cookie sheet, Bake at 375F for 10-12 mins.
Make about 4-5 dozen cookies.
