Snowman Cookies

With us in the midst of the winter season I saw this and thought it was a cute recipe to try after being outside building snowmen with the kids or just to have on hand for when company comes over. Always a conversation starter.

Ingredients:

1 pkg (8oz) cream cheese, softened
1 cup powdered sugar
3/4 cup butter or margarine
1/2 tsp vanilla
2-1/4 cups flour
1/2 tsp baking soda
sifted powdered sugar
miniature peanut butter cups (optional)

Directions:

1. Mix cream cheese, 1 cup sugar, butter and vanilla with electric mixer on medium speed until blended. Add flour and baking soda, mix well.

2. Shape dough into equal number of 1/2 inch and 1 inch diameter balls. Using 1 small ball and 1 large ball for each snowman, place balls slightly overlapping, on ungreased cookie sheets. Flatten to 1/4 inch thick with the bottom of a glass dipped in flour. Repeat until all dough is used up.

3. Bake at 325 degrees F for 19-21 minutes or until a light golden brown color. Cool on wire racks. Sprinkle each snowman with sifted powdered sugar. Decorate with icing as desired. Cut miniature peanut butter cups in half to use as hats.

Makes about 3 dozen cookies.

Sugar Cookies

Ingredients:

1 pkg (8oz) cream cheese, softened
1 cup butter or margarine, softened
2/3 cup sugar
1/4 tsp vanilla
2 cups flour
colored sugar, sprinkles and colored gels

Directions:

1. Beat cream cheese, butter, 2/3 cup sugar and vanilla with electric mixer on medium speed until well blended. Mix in flour, refrigerate several hours or overnight.

2. Roll dough to 1/4 inch thickness on lightly floured surface. Cut into desired shapes, sprinkle with colored sugar. Place on ungreased cookie sheet.

3. Bake at 350 degrees F for 12-15 minutes or until edges are lightly browned/ Cool on wire racks. Decorate as desired with colored sugar, sprinkles and colored gels.

Makes about 3-1/2 dozen cookies.

Tip: To soften butter in the microwave quickly without melting it, place on microwavable plate or bowl and heat at low (30% power) for about 30 seconds or until soft.

Peanut Butter & Jam Thumbprints

Ingredients required:

1 cup Peanut Butter
1/2 cup margarine
1/2 cup firmly packed brown sugar
1/4 cup sugar
1 egg
1/2 tsp vanilla
1 cup all purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup Red Raspberry Jam

Directions:

1. Preheat oven to 375F.

2. Cream peanut butter, margarine and sugars in large mixing bowl. Add egg, vanilla and beat until smooth.

3. Sift dry ingredients together. Stir into peanut butter mixture just until blended. Refrigerate covered for at least 1 hour.

4. Shape dough into 1 inch balls and place on ungreased cookie sheets. Use thumb to make indentations in the center of the ball.

5. Bake 8-10 minutes or until lightly browned, cool. Then transfer to wire racks to cool completely.

6. Fill centers with jam once cooled.

Makes about 4 dozen cookies

Oatmeal Cookies

Ingredients Required:

1 cup margarine
1 cup sugar
2 eggs
1 tsp vanilla
1-1/2 cups unsifted all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp Cinnamon
2 cups semi sweet chocolate chips
1-1/4 cups quick cooking rolled oats

Directions:

1. Preheat oven to 375F.

2. Cream margarine with sugar. Beat in eggs and vanilla.

3. Stir together flour, soda, salt and Cinnamon. Stir gradually into creamed mixture.

4. Add chocolate chips and oats.

5. Drop by the tablespoons onto ungreased cookie sheets.

6. Bake for 12-14 mins.

Makes 4 dozen cookies

Shortbread Drop Cookies

Ingredients required:

1 cup flour
1-3/4 cups flour
4 tbsp icing sugar
1 tbsp cornstarch
vanilla to taste

Directions:

1. Preheat oven to 350F.

2. Mix all ingredients together and beat well.

3. Bake in oven on greased cookies sheet for 12-15 mins.

Chocolate Chip Cookies

This is a great recipe to make for a bake sale or anything that needs a large amount of cookies. This recipe makes 6 dozen cookies.

Ingredients required:

1 cup Golden Crisco Shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 Eggs
2 tsp vanilla
2 cups all purpose flour
1 tsp baking soda
1 tsp salt
2 cups chocolate chips
1 cup chopped nuts

Directions:

1. Preheat oven to 375 F.

2. Cream together shortening, brown sugar, and granulated sugar.

3. Beat in eggs and vanilla.

4. Combine flour, baking soda, salt, then blend into dry mixture.

5. Stir in chocolate chips and nuts/

6. Drop from a small spoon onto ungreased cookie sheet.

7. Bake for 10-12 minutes until golden brown.

Oatmeal & Dried Fruit Cookies

This is a great way to add fruit into a cookie recipe.

Ingredients required:

2 cups Whole wheat flour
2 cups rolled oats
1/2 cup lightly packed brown sugar
1/2 tsp salt
3/4 tsp baking soda
1 cup chopped mixed dried fruits
2/3 cup corn oil
1/2 cup buttermilk

Directions:

1. Preheat oven to 180C or 350F.

2. In a large bowl combine all the dry ingredients including the dried fruit.

3. Add oil and buttermilk and mix well.

4. Roll out the mixture to 3 mm thickness.

5. Use a cookie cutter to cut into 9-cm circles.

6. Place on oiled cookie sheets with a spatula.

7. Bake for 15-20 mins.

8. Cool cookies on wire rack.

Chocolate Chip Cookies

I got this one from a friend back in High School. The recipe is great, easy to make and if you use Crisco's Golden Shortening, the color and flavor to this recipe is amazing. By far one of the best chocolate chip cookies recipes out there!

Ingredients:

1 cup shortening or 3/4 cup butter

1 cup brown sugar

1/2 cup white sugar

1 tsp vanilla

2 eggs

1 tsp baking soda

1 tsp salt

1 cup chocolate chips

2 cups flour

Directions:

1. Preheat oven to 375F.

2. Mix shortening, brown sugar, white sugar, vanilla, and eggs into a bowl.

3. Mix dry ingredients in separate bowl.

4. Add flour mixture slowly to wet ingredients.

5. Add in chocolate chips.

6. Bake for 7-10 minutes until golden brown.

Peanut Butter Cookies

Peanut butter cookies, always a delicious treat!!

Ingredients:

3/4 cup flour

1/8 tsp baking soda

1/4 tsp baking powder

1/8 tsp salt

1/4 cup margarine

1/4 cup peanut butter

1/4 cup white sugar

1/4 cup brown sugar

1 egg

1/2 tsp vanilla

Directions:

1. Preheat oven to 375F.

2. Mix flour, baking powder, salt.

3. Cream butter and peanut butter until light, then add both sugars and cream together.

4. Beat in egg and stir in vanilla.

5. Add flour in 3 parts.

6. Measure out tablespoons of dough and form into balls.

7. Bake for 10-12 minutes or until golden brown.

Shortbread Cookies

This is another recipe I received from a family friend. Easiest shortbread recipe I've ever made!

Ingredients:

1 cup butter (soft)

1-1/2 cups flour

1/2 cup icing sugar

1. Whip at medium speed for 10 mins.

2. Drop on cookie sheet lined with parchment paper.

3. Bake at 325F for 10 mins.

Oatmeal Cookies

This is a recipe we've been using in the family for years now. Very good and easy to make.

1/2 cup margarine
1/2 cup shortening
3/4 cup packed brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla
1-1/2 cup flour
1tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 cups semi-sweet chocolate chips
2 cups quick rolled oats

1. Cream together margarine, shortening, brown sugar, and white sugar.
2. Beat in eggs and vanilla.
3. Combine in separate bowl flour, baking soda, cinnamon, salt.
4. Blend into creamed mixture.
5. Stir in rolled oats and chocolate chips.
6. Spoon onto greased cookie sheet, Bake at 375F for 10-12 mins.
Make about 4-5 dozen cookies.

Double Chocolate Peanut Butter Cookies

Ingredients:

I just came across this recipe this past year and needless to say it quickly became one of my favorite recipes to make. Delicious!!!

Ingredients required:

1 cup (250ml) packed Brown Sugar

1/2 cup (125ml) margarine or butter

1/2 cup (125ml) shortening

1/2 cup (125ml) peanut butter

1 egg

2tsp (10ml) vanilla

2-1/2 cups (625ml) uncooked rolled oats

2 cups (500ml) Flour

1/4 tsp (1ml) salt

1/2 cup (125ml) miniature semi-sweet chocolate chips

36 miniature peanut butter cups

Instructions:

1. Preheat oven to 350F - 180C.

2. Mix sugar, butter, shortening, peanut butter, egg and vanilla in a large bowl. Beat at medium speed until it is mixed well.

3. Add oats, flour, and salt. Beat at low speed until all is mixed together then stir in chocolate chips.

4. Shape balls of dough into 1-1/4 inch (3 cm) balls. Place balls 2 inches (5cm) apart on cookie sheets.

5. Bake cookies for 10-14 minutes, take out of oven and press peanut butter cup into the cookie.

6. Enjoy!!
