Cold Rotini Salad

This is a great meal for a hot summer day! Make in the morning, cool in your fridge and at supper time you'll have a delicious cold rotini salad.

Ingredients:

2 cups uncooked rotini

2 tomatoes chopped

1 green onion

1/2 cucumber

Dressing:

2/3 cup white sugar

1/2 cup oil

1/3 cup ketchup

1/4 cup vinegar

1 tsp salt

1/4 tsp pepper

1 tsp paprika

Directions:

1. While rotini is cooking, make dressing and put in fridge.

2.Once rotini is cooked, rinse with cold water to cool then add all ingredients to the rotini and mix well.

3. Cool in fridge until ready to serve.

Apple Crisp

This is a great recipe for the fall, with fresh apples so abundant, why not try baking with the apples and making an apple crisp.

Ingredients:

4 Medium sized apples

3 cup brown sugar

1/2 cup flour

3/4 cup oats

1/2 cup butter

Method:

1. Preheat oven to 350F

2. Peel apples, cut, slice thin and spread evenly over a greased pan. Add more apples if desired.

3. Mix together oats, brown sugar, flour. Add butter and mix until mixture is crumbly.

4. Sprinkle mixture over apples.

5. Bake in oven for approximately 30 mins, or 25 mins if in a glass pan.

6. Serve warm with a scoop of vanilla ice cream... Delicious!!

Peanut Butter Balls

This is a great recipe. It freezes well and is a family favorite!

Ingredients:

1 cup peanut butter

1 cup Rice Krispies

1 cup icing sugar

2 tbsp butter

1 tsp vanilla

1/3 of a Parowax bar

1 sml pkg of chocolate chips

cherries (optional)

Instructions:

1. Mix peanut butter, Rice Krispies, icing sugar together.

2. Add melted butter and vanilla.

3. Form into balls and add cherries to the centers if desired.

4. To make add parowax and chocolate chips in a double boiler.

5. Dip balls in chocolate and then place on wax paper.

Cherry Dip

This is a great recipe for a family get together and easy to make. Pairs well with sociable crackers or Ritz.

Mix all together in a bowl. Great recipe.

Mars Bars Squares

Delicious for all Mars bars lovers out there and fast to make!

Ingredients:

4 mars bars

1/2 cup margarine

3 cups rice krispies

Directions:

1. Heat bars cut up in the margarine. Remove from heat when melted.

2. Add 3 cups Rice Krispies to mixture.

3. Put into a greased pan (9x9)

4. Melt 1/4 cup margarine and 1 cup of chocolate chips. Spread over the bars.

Shortbread Cookies

This is another recipe I received from a family friend. Easiest shortbread recipe I've ever made!

Ingredients:

1 cup butter (soft)

1-1/2 cups flour

1/2 cup icing sugar

1. Whip at medium speed for 10 mins.

2. Drop on cookie sheet lined with parchment paper.

3. Bake at 325F for 10 mins.

Butterscotch Pinwheels

This is a recipe I received from a family friend, easy to make and a great variation from your normal cinamon pinwheels.

Ingredients:

2 cups flour

4 tsp baking powder

1 tsp salt

1/2 cup shortening

1 cup milk

1/3 cup margarine

2/3 cup brown sugar

Instructions:

1. Preheat oven to 350F

2. Mix flour, baking powder and salt together.

3. Add in milk and shortening and mix well.

4. Roll out.

5. Cream together margarine and brown sugar.

6. Spread mixture evenly over dough.

7. Roll dough and then cut in slices.

8. Cook for 12-15 mins until golden brown.
